Pumpkin Muffin Recipe


Pumpkin muffins are one of the best breakfast foods in the world.  Try them and you’ll see.


Ingredients:

2 Cups All-Purpose Flour

1 tsp. Baking Soda

2 tsp. Cinnamon

1/4 tsp. Baking Powder

1/2 tsp. Salt

1 1/2 Cups Sugar

3 Large Eggs

3/4 Cup Vegetable Oil

1 tsp. Vanilla extract

3 Cups shredded pumpkin, fresh or frozen

1 Cup Toasted Pumpkin Seeds, optional


Preheat the oven to 325 degrees F.


Directions:

Prep the muffin pans with: paper cupcake liners.


Mix the flour, baking soda, cinnamon, baking powder, and salt together.


In a separate bowl, mix the sugar, eggs, vegetable oil, and vanilla.  Then combine both mixtures and fold in the shredded pumpkin and pumpkin seeds.  Once the ingredients are all incorporated, pour into muffin pans.


Bake for 30 to 35 minutes.  At this point, a toothpick inserted into the middle should come out clean.  Cool for 15 minutes and turn out onto a cooling rack.
